SOURDOUGH BREAD BAKING

A natural sourdough is of great help to the occurrence of the enzyme and flavor precursor processes that occur in a long fermentation. Thanks to the help of the "wild" bacteria and yeasts present in the ferment, it is possible to: improve nutritional input and digestibility; increase moisture retention and therefore bread storage; in addition to gaining in taste, aroma and complexity.

Throughout a course of 4 classes, we acquire tools through experimentation and observation, to be able to make decisions throughout the bread process: natural ferment, kneading, mass rest, forming, fermentation and baking.

Introduction to bakery doughs; kneaded without kneading; folds and colomba; primitive formed

Focaccia, Ciabatta, Fougasse, Primitive Buns

Special flours; activated seeds; gerins; battered and cut; mother mass

Baguette, Seed Buns, Zepelin, Mold

Class 3 / Salted Breads

Fermentation and baking

Bagels 7 spices, Vienna-style bread, Amapola Bialys, Burguer Bollos

(Old Mustard)

Class 4 / Guardian Breads

Dry dough and biscuits; laminate; make the most of the masses; conclusions and doubts

Crackers, Cookies, Greys, Crote
